Greek Marinade for Grilled Zucchini

This recipe is courtesy of Diane Perry. Enjoy!

   2 T.   onion, minced
1 clove garlic, minced
   6 T.   olive oil
   6 T.   lemon juice
    2 t.   salt
1/2 t.   pepper
    1 t.   dried oregano leaves
zucchini, peeled and sliced 1/2" to 3/4" thick
mushrooms, halved

Combine first 7 ingredients in bowl and then add zucchini and mushrooms, stirring until well coated.  Marinade in fridge 3 hours minimum.  Put on skewers and grill.  (Also good with chicken).
