Cool Summer Recipe - Black Bean Salsa

This is a family favorite.

1/3 c. garlic red wine vinegar
1/3 c. olive oil
  3   cloves garlic, crushed
1/2 tsp. pepper
3/4 tsp. salt
Mix above in small bowl and set aside.  

In large bowl combine:
3 cans black beans, drained well
1 can tomatoes, crushed, don't drain (seasoned or plain or fresh in same approx. amt.)
1 10 oz. can corn, drained
1 onion, chopped (can use red or yellow or white)
1 red bell pepper, chopped
1 green bell pepper, chopped
1 jalapeño pepper, chopped (optional if you don't like it hot)
1/2 c. cilantro (optional)

Pour vinegar mixture over all other ingredients.  Refrigerate 4-8 hours before serving with corn chips for best mixed flavor.
