Canning Bible


This is my canning bible.  I have used the "Ball Blue Book" for more than a decade now.  This book is what the USU Extension Service recommends for safe canning recipes (they have all been tested and are proven safe).  It has easy to read instructions for how to use a water-bath canner and pressure canner (including pictures).  It has recipes for almost anything you can think of to bottle from jams and jellies, to fruit, to tomatoes (salsa, spaghetti, stewed, Italian, etc.), to vegetables, to pickled food to even recommendations on equipment to use.  It even has suggested recipes for use of canned goods like Blueberry-Lemon Muffins!  Every recipe I have tried has turned out great.  I grew some okra a couple of years ago in my garden and was curious to see if there were any suggestions and sure enough, there was a "Okra and Tomatoes" canning recipe which turned out great and I grew more okra this year to do it again.
